Lamingtons are an Australian dessert and a favorite in my family. Nana was kind enough to demonstrate her technique and share the recipe.
Ingredients:
yellow cake mix (and ingredients needed to make the cake)
3 c. sugar
2 T. cocoa
1 c. water
1 t. vanilla
1 bag of desiccated coconut
Bake a 9”x13” yellow cake (better to use the kind without the pudding). Slice into squares, set on cooling rack, allow to cool completely (at least 4 hours
You can put the squares in the freezer if you need to cool them quickly.
Bring the sugar, cocoa and water to a boil on the stove top.
With a pastry brush, wash down the sides of the pan so the sugar granules are in the mixture.
Return to heat, bring to a low bowl for 12 minutes without stirring.
Nana advises enjoying a beer during those 12 minutes.
Be sure to use a fine desiccated coconut. It's worth the trouble to find it.
